The pomelo-rita is my favorite Margarita. My recipe is something like this: Pour 2-3 oz juice of a Pomelo, juice from 1/2 lime, 1 shot (apx) Cazadores (or your favorite) tequila, and a splash of Cointreau over ice. I stir it with a chopstick. Top with a splash of Damiana. Then climb up onto your roof and watch the sunset with the pomelo-rita in hand. mmmm…. You can also add sparkling water to this if you want more fizz, less buzz. Pomelo season will be here soon…I can’t wait! I usually buy them from Twin Girls at the farmers market.

Cauliflower & Green Bean & Carrots with Chickpea Flour Sauce, Brown Rice

Tonight we felt like a indian-spiced stew with rice – a two pot meal. I modified the recipe from Madhur Jaffrey’s World Vegetarian cookbook, and we had some apricot-plum-ginger-jalapeño chutney Amy made and canned a few months ago on the side. Some people had some creamy goat cheese also on the side.

White Nectarines and Asian Pears

The fruit in season right now is meltingly delicious. We also had some with orange juice, scrambled eggs, and tomato-rosemary scones for brunch.

Greens, Cilantro Tofu, Roasted Scallions, and Brown Rice

The cilantro tofu we bought from the farmer’s market; the greens are our standard recipe; the scallions were tossed in olive oil & salt & pepper and cooked in a 425º oven until brown and crispy.

Some of us had Monterey Bay cod marinated with smoked salt & lemon juice & tarragon and broiled until tender on the side.

This is the meal we make when we are tired and hungry and just want something simple, fast, and delicious. Although, the reason it is fast is because we own an immersion blender. Immersion blenders are inexpensive, easy to clean, and ours comes with a mini food processor attachment. The Penne Vodka recipe from the Veganomicon is a house favorite, which we made with fresh tomatoes tonight. And you may have noticed how much we like greens. :)

Labor Day Weekend Hiking

This weekend we went aquahiking at Arroyo Seco state park. We spent a night down there, and went out to dinner (mexican food at Tortilla Flats) on the way back. So, no food pictures.

Monday night Ian made us baked tofu, roasted pepper, roasted tomato and aioli sandwiches on ciabatta which we ate on a picnic by the ocean. They were delicious, but we did not have the camera.

Fried Okra and Onions, Roasted Glazed Eggplant, Vegan Fish, Kimchi, Cucumber Pickles, Omelette, Greens and Brown Rice

I knew I had to try this vegan fish recipe since we can get fresh yuba at the farmer’s market.

We made okra and eggplant similar to this posting, except tonight the eggplant had cilantro, fresh chile, whole scallions, and no ketchup or tamarind. I think it was even better than before.

The cucumber salad had lemon juice, smoked salt, toasted sesame oil, and szechuan peppercorns.

Fried Squash Blossoms, Pissalediere, Salad, and Coconut Lime Pie

Pissalediere

Crust

1 1/2 cup flour
1 1/2 cup semolina
1 1/2 tsp baking powder
1 tsp salt
1 tsp nigella seeds
1/4 cup Earth Balence (or oil)
water

Mix the dry ingredients for the dough. Cut in the fat with your fingers. Add enough water to make a cohesive dough. Press it out into a large, oiled, rectangular pan and prebake at 450º for about 10 minutes.

Topping

Thinly Sliced Onion
Roasted Red Peppers
Tomatoes
Sliced Olives
Capers

Fry the onion until it starts to carmelize: 15 minutes. Add the remainder of the ingredients and cook until the flavours have blended together. Spoon onto the crust and bake until the crust is cooked — 10-15 more minutes.

The fried squash blossoms are always a hit.

The lime pie recipe turned out delicious, and soy free.

Tofu Béarnaisedicts with Broccoli-Red Pepper Stir-Fry

I love béarnaise sauce, but this recipe was too gummy. I will post a recipe when it is good. The broccoli and red peppers are stir-fried with soy sauce and fresh lemon juice.

Mexican Chocolate Rice Pudding

We went out to get tacos with our friends tonight, so no dinner pics. However, we did make rice pudding with cinnamon and chocolate for dessert.
