Marinated Baked Tofu, Roasted Scallions, Spinach and Squash with Sesame Sauce, Rice


The cilantro tofu we bought from the farmer’s market; the greens are our standard recipe; the scallions were tossed in olive oil & salt & pepper and cooked in a 425ยบ oven until brown and crispy.
Some of us had Monterey Bay cod marinated with smoked salt & lemon juice & tarragon and broiled until tender on the side.

I knew I had to try this vegan fish recipe since we can get fresh yuba at the farmer’s market.
We made okra and eggplant similar to this posting, except tonight the eggplant had cilantro, fresh chile, whole scallions, and no ketchup or tamarind. I think it was even better than before.
The cucumber salad had lemon juice, smoked salt, toasted sesame oil, and szechuan peppercorns.
